A delicious and hearty Chicken Parmesan Sandwich made with crispy fried chicken breasts, fresh mozzarella, and a tangy pesto mayo sauce, all served on Italian bread.

Ingredients

  • olive oil

  • 1 yellow onion, minced

  • 2 Tbsp. minced garlic

  • 1 tsp. balsamic vinegar

  • 2 Tbsp. fresh pesto

  • 1/4 mayo

  • 4 chicken breasts

  • tsp. salt

  • tsp. pepper

  • 1 egg

  • 1/2 C. flour

  • 1/2 C. panko breadcrumbs

  • 2 mozzarella balls

  • 2 Italian bread loaves

  • 1 C. tomatoes, diced

  • 1/2 C. parmesan cheese

Directions

  • Prepare the chicken:
    Pound the chicken breasts to an even thickness. Season with salt and pepper.
  • Coating:
    In one bowl, beat the egg. In another, combine flour and panko breadcrumbs. Dip each chicken breast in the egg, then dredge in the flour and panko mixture.
  • Cook the chicken:
    Heat olive oil in a skillet over medium heat. Fry the coated chicken breasts until golden brown and cooked through (about 5-6 minutes per side). Set aside.
  • Prepare the sauce:
    In a small pan, sauté minced onion and garlic in olive oil until translucent. Add balsamic vinegar, and tomatoes. Stir to combine and simmer for 15 minutes. In a separate bowl combine mayo and pesto.
  • Assemble the sandwiches:
    Slice the Italian bread loaves in half. Spread the sauce mixture on the bread. Place a cooked chicken breast on each half, then top with sliced mozzarella and parmesan.
  • Bake/Grill
    Preheat your oven to 375°F. Place the sandwiches on a baking sheet and bake for 10-12 minutes, or until the cheese is melted and bubbly. If using grill heat to 200°F and cook for 7 minutes or until cheese is melted
