Ingredients
olive oil
1 yellow onion, minced
2 Tbsp. minced garlic
1 tsp. balsamic vinegar
2 Tbsp. fresh pesto
1/4 mayo
4 chicken breasts
tsp. salt
tsp. pepper
1 egg
1/2 C. flour
1/2 C. panko breadcrumbs
2 mozzarella balls
2 Italian bread loaves
1 C. tomatoes, diced
1/2 C. parmesan cheese
Directions
- Prepare the chicken:
Pound the chicken breasts to an even thickness. Season with salt and pepper. - Coating:
In one bowl, beat the egg. In another, combine flour and panko breadcrumbs. Dip each chicken breast in the egg, then dredge in the flour and panko mixture. - Cook the chicken:
Heat olive oil in a skillet over medium heat. Fry the coated chicken breasts until golden brown and cooked through (about 5-6 minutes per side). Set aside. - Prepare the sauce:
In a small pan, sauté minced onion and garlic in olive oil until translucent. Add balsamic vinegar, and tomatoes. Stir to combine and simmer for 15 minutes. In a separate bowl combine mayo and pesto. - Assemble the sandwiches:
