Ingredients
1 (8″) flour tortilla
3 large eggs
1/4 C. spinach leaves, chopped
1/4 C. shredded cheese
1/4 C. sausage, chopped
1 Tbsp. Mayo or Miracle Whip
Salt & Pepper to taste
Directions
- Heat butter or oil in a skillet over medium heat. Add eggs and stir to scramble them. When eggs are almost done, add chopped spinach and cook until wilted. Remove from heat and set aside.
