A warm and filling spinach breakfast wrap made with scrambled eggs, fresh spinach, melty cheese, and your choice of veggies, all wrapped in a soft tortilla.

Ingredients

  • 1 (8″) flour tortilla

  • 3 large eggs

  • 1/4 C. spinach leaves, chopped

  • 1/4 C. shredded cheese

  • 1/4 C. sausage, chopped

  • 1 Tbsp. Mayo or Miracle Whip

  • Salt & Pepper to taste

Directions

  • Heat butter or oil in a skillet over medium heat. Add eggs and stir to scramble them. When eggs are almost done, add chopped spinach and cook until wilted. Remove from heat and set aside.

  • Place the tortilla on a flat surface. Spread mayo on the tortilla shell. Spread the scrambled eggs, spinach, and sausage in the center. Add cheese on top
  • Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Place it seam-side down in a warm skillet and cook for 1-2 minutes per side to melt the cheese and toast the tortilla.
