Ingredients

  • 3 eggs

  • 1 C. white sugar

  • 1 C. brown sugar

  • 1. C butter

  • 1 1/2 C. peanut butter

  • 1 t. vanilla

  • 2 t. baking soda

  • 5 C. oatmeal

  • 1 C. chocolate chips

  • 1 C. mini M&Ms

  • 1 C. coconut

Directions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, cream together eggs, butter, peanut butter, vanilla, white sugar, and brown sugar until light and fluffy.
  • In a separate bowl, combine baking soda and oats. Gradually stir this into the wet mixture. Fold in the chocolate chips, mini M&Ms, and coconut.
  • Bake for 10-12 minutes or until the edges are lightly browned, but the center still looks soft. Enjoy your soft, chewy, and loaded Monster Cookies!
  1. Chill the Dough: If your dough feels too soft or sticky, chill it in the fridge for 30 minutes before scooping. This will help the cookies hold their shape better and prevent spreading too much during baking.
  2. Use Old-Fashioned Oats: For the best texture, use old-fashioned rolled oats instead of quick oats. They provide more chewiness and hold the cookie together better.
  3. Room Temperature Ingredients: Make sure the butter and peanut butter are at room temperature for easier mixing. This ensures a smooth and even dough without lumps.
  4. Storage: Store these cookies in an airtight container for up to a week. To keep them soft, place a slice of bread in the container — the cookies will absorb the moisture from the bread and stay fresh longer
